  • 3 tbsp butter melted

Method
 

  1. Prepare the apples: Preheat oven to 375°F. Cut apples in half from stem to bottom. Use a melon baller or small spoon to scoop out the core and seeds, creating a little well in each half. You can leave the skin on - it helps the apples hold their shape and adds color. Arrange apple halves cut-side up in a baking dish, fitting them snugly together.
  2. Make the honey-butter mixture: In a small bowl, whisk together melted butter, honey, cinnamon, and a pinch of salt. The salt enhances the sweetness and adds depth. The mixture should be smooth and pourable. Taste it - it should be sweet, buttery, and warmly spiced.
  3. Roast the apples: Drizzle the honey-butter mixture generously over the apple halves, making sure to get some in the wells where the cores were removed. Use a pastry brush or spoon to coat them evenly. Pour any extra mixture into the bottom of the baking dish. Roast for 25-30 minutes, basting with the pan juices halfway through. The apples should be tender when pierced with a fork but still hold their shape. They should be caramelized and golden around the edges, and the honey-butter should be bubbling in the pan.
  4. Serve warm: Remove from oven and let cool for just 2-3 minutes - you want them warm, not piping hot. Place one or two apple halves in each serving bowl. Drizzle generously with the caramelized honey-butter sauce from the pan - this is liquid gold! Top each serving with a scoop of vanilla ice cream.
